Curry can be done quickly and simply and still taste wonderful. This is the simple version (the other versions will come later).
Ingredients are lamb, onion, tomatoes, ginger, garlic, cinnamon sticks, ground coriander, ground cumin, curry powder, turmeric, sugar, salt and pepper.
Chop the onion and fry it with the garlic and ginger in a hot pan. Add the cinnamon sticks to the onion mix while it is cooking.
Next, add the spices, salt & pepper and chopped tomato to the mix.
Once it is blended, add the lamb to the frying pan. Mix with the spices and onion.
Transfer the mixture to a casserole dish and bake (covered) in a 300F oven for 1 1/2 hours.
Serve over basmati rice with a salad.

- 1 onion, finely chopped
- 3 Roma tomatoes, finely chopped
- 2 tsp crushed garlic
- 1 tsp minced ginger
- 3 sticks of cinnamon
- 1 tsp ground coriander
