These are great to make with kids and can be made a few days in advance and kept in the fridge until Easter Sunday. Note: it can be a sticky mess but I’m sure that won’t deter the kids!
Ingredients are chow mein noodles, mini marshmallows, caramel (dulce de leche), chocolate chips, butter, and mini chocolate eggs.
First, melt the marshmallows and butter in a large saucepan over low heat, stirring continuously to prevent burning.
Once melted, add caramel and chocolate chips to the mixture.
Mix until blended together.
Remove the saucepan from the stove and stir in the chow mein noodles until all the noodles are coated with the chocolate mixture.
Spoon heaped tablespoons of the noodle mixture into the cupcake liners. I used larger ones this time.

Press 3 mini eggs into the nests before the nests cool.
Enjoy on Easter Sunday.
- 4 cups Chow Mein Noodles
- 4.5 cups Mini Marshmallows
- ¼ cup of Butter
- ¼ cup of Semi Sweet Chocolate Chips
- ¼ cup of Caramel (Dulce De Leche)
- 16 Cupcake Liners
- 10 oz bag Cadbury’s Mini Eggs
- Tip: Replace Dulce de Leche with Peanut Butter. Replace Cadbury Eggs with Reese’s Peanut Butter Eggs.
- Melt marshmallows and butter in a large saucepan over low heat, stirring continuously.
- Once melted, add caramel and chocolate chips to the mixture and mix well.
- Remove saucepan from the stove and stir in the chow mein noodles until all the noodles are coated.
- Spoon heaped tablespoons of the noodle mixture into the cupcake liners and press 3 mini eggs into the nests before the nests cool.
