On Saturday I started clearing out some of the contents of my freezer and found these chocolate dessert shells tucked in the way back. We were going to our neighbours for a games evening and so I figured these would make a great dessert.
The lemon cheesecake part of the dish is simply cream cheese, gelatin, sugar, vanilla, lemon juice and peel and buttermilk.
Start by pouring a packet of gelatin over 3 tablespoons water in a small bowl and allow it to ‘form’.
Next juice and peel the lemon.
Heat 3/4 cup of water in a saucepan and add 1 tablespoon of the lemon juice to the water.
Next, add the gelatin from the small bowl and blend until fully dissolved.
Cream the cream cheese and sugar together until well blended.
Add the vanilla extract and lemon peel and combine.
The buttermilk is next.
Followed by the gelatin mixture in the saucepan. Add both the buttermilk and gelatin mixture in a slow, steady stream.
Pour the cheesecake mixture into the chocolate dessert cups and refrigerate for about 2 hours until set.
Garnish with lemon rind, chocolate and cream before serving.

So much about your cheesecake in chocolate cups recipe is completely new to me. First, those chocolate cups look tasty and I bet they’d be a ton of fun to use in treat recipes. I have also never used gelatin, which I definitely would love to explore…I see neufchatel cheese on ingredient lists from time to time, and I have never tried this either.
