In South Africa we call corn “mealies” which comes from the Afrikaans word “mielie” which in turn came from the Dutch settlers who called corn “milies”.
This bread is a traditional bread served at a ‘braai’ (BBQ) but can be enjoyed at breakfast too.
The ingredients are flour, salt, baking powder, bacon, eggs, cheese, butter and frozen or fresh corn kernels.
Preheat the oven to 350F and then start by frying up the bacon bits until crispy.
Sift the dry ingredients together.
Whisk the melted butter, milk and eggs together in a bowl.
Add the mixture to the dry ingredients and blend well.
Add the corn kernels, cheese and bacon to the mixture and blend well (mixture will be thick).
Pour the mixture into a lined loaf tin and top with half a cup of grated cheese.
Bake the bread for 60-75 minutes or until a toothpick comes out clean.
Allow the bread to cool before slicing. Top with butter and enjoy as a side or for breakfast.

- 4 Large Eggs
- 1 cup Milk

These are soooo good! Since I was making them for my son’s class, I used mini cupcake papers and baked for 16 minutes (using the toothpick method). They turned out great! I’ll be keeping a few mini muffins for myself!
