Since we’re trying out the Paleo way of eating, I decided to try alternative to rice which is cauliflower disguised as rice.
The ingredients are cauliflower, red & yellow pepper, onion, garlic, seasoning, salt, olive oil and chicken stock.
Chop the cauliflower head into chunks.
Place the cauliflower in a microwave-safe dish with 2 cups of water and cook for about 7 minutes. It doesn’t need to be fully cooked.
Using a blender, chop the cauliflower pieces into finer pieces, resembling grains of rice.
Cut the red pepper, yellow pepper and onion and mince the garlic.
Heat the olive oil in a saucepan and saute the onion, peppers and garlic until softened.
Add the chopped cauliflower to the saucepan.
Add the chicken stock to the mixture and then the salt.
Season with your choice of seasoning – I use Mrs. Dash Table Blend. Allow to simmer for 15 minutes uncovered until the cauliflower is softer (but not mushy.)
Serve hot with your meal.
