I love wholewheat versions of cakes, cupcakes and bars and these bars have wholewheat flour in them. These wholewheat carrot cake bars are going to my hubby’s office because I could eat the whole lot.
The list of ingredients are applesauce, sugar, eggs, olive oil, vanilla, whole wheat flour, baking soda, cinnamon, salt, grated carrots and walnuts.
Start by whisking the apple, sugar, eggs, oil and vanilla in a bowl until blended.
In a large bowl, sift the whole wheat flour, baking soda, cinnamon and salt together.
Make a well in the flour and add the apple/sugar mixture and blend well.
Next, add the grated carrots and walnuts to the cake batter and mix well.
It kind of looks like Gerber baby food when it’s all mixed up. Pour the mixture into a baking sheet pan and bake in a 350F oven for 35 minutes or until an inserted skewer comes out clean. Cool completely, before icing the top.
For the icing, you’ll need cream cheese, butter, vanilla extract and powdered sugar.
Add the cream cheese, butter and vanilla extract to a bowl and beat until blended until blended.
Next, add the sifted icing sugar (I sift as I add it) 1/4 cup at a time and beat until smooth.
Smooth the icing over the top of the cooled cake.
Decorate with walnut pieces.
Slice into bars.
Great with a cup of coffee next to the fire.
