My kids and I make banana bread once a week. They love it and it's a great snack to have on hand. We are adding a few grain-free/Paleo items into our diet which I've heard helps with general health including alleviating eczema (Jordan) and those with ADD (Cullen). The Paleo pancakes went down really well with the kids so it was time to try another grain-free alternative.

More 'sighing' bananas, i.e.: bananas that are ripe and won't get eaten by my family. And so its into the kitchen I go.
Ingredients are milk, butter, eggs, flour, bran, baking soda, baking powder, maple syrup and bananas.
Place the flour, baking powder, salt, bran, raisins and banana in a bowl.
Don't forget the nutmeg…I almost did!
In a separate bowl, mix the milk and baking soda together, stirring until the baking soda ...

The bacon and banana duo is by far one of my favourite toasted sarmies (grilled sandwiches) I've had. My Mom used to make them and as a child I never ate them. I've come to really appreciate the flavours though. Give it a try.

Mash the banana in a bowl and set aside.
Butter each slice of the bread really well.
Turn ...

I will always have an excuse to bake because I will always have bananas that way past their eat-by date. Its just the way it is in our house. And I don't mind. Almost every weekend I bake banana bread and the kids consume most of it by the time I bake another one.
This time, I thought I'd change it up a little and make citrus banana muffins.

For a bit of a healthy choice for an afternoon snack…this is one of my favourites.
These are great when those hunger pangs start up - for me its around 3:30 pm. The oats in the cookie acts as a filler and keeps those intimidating hunger pangs at bay until dinner time.
The plums contribute the same way as prunes do. As I said, nice and healthy.
The ingredients are oats, coconut, ...
