Published Saturday, November 10, 2012 By Traci. Under ALL, LottaFOOD  Tags: Breakfast, paleo
These muffins are quick, easy and taste really good. Jordan is back on a grain-free diet to help reduce his eczema and he gave me the thumbs up for these.  The ingredients are: almond flour, coconut flour, baking powder, salt, egg whites, butter, cheese and bacon.  Start by mixing the dry ingredients together in a bowl. Cube the butter and add it to the dry ingredients.  Using a pastry cutter (or your fingers), work ...

These pancakes are grain-free but fluffy and light. My son who should be eating grain-free (due to his ezcema) and who is a fussy eater when it comes to grain-free gave me 2 thumbs up when I made these pancakes.  Ingredients are almond flour, eggs, agave, salt, baking soda and salt.  Separate 3 of the eggs and add the egg whites to a bowl. Beat until soft peak stage.  Add the rest of ...

In South Africa we call corn "mealies" which comes from the Afrikaans word "mielie" which in turn came from the Dutch settlers who called corn "milies".  This bread is a traditional bread served at a 'braai' (BBQ) but can be enjoyed at breakfast too.  The ingredients are flour, salt, baking powder, bacon, eggs, cheese, butter and frozen or fresh corn kernels.  Preheat the oven to 350F and then start by frying up the ...

A Twist on Eggs Benedict

I have two favourite breakfast dishes. Eggs Benedict is the first favourite. I order it at every restaurant that has it on the menu. So creamy. So fattening. I love it. The other is mashed avocado (with a touch of vinegar) with salt & pepper spread thickly on warm toast.  So creamy.  So fattening.  I love it. Some days I'll throw 2 slices of bacon on top of the mashed avo. Its ...

Banana Citrus Muffins

I will always have an excuse to bake because I will always have bananas that way past their eat-by date. Its just the way it is in our house. And I don't mind. Almost every weekend I bake banana bread and the kids consume most of it by the time I bake another one. This time, I thought I'd change it up a little and make citrus banana muffins.     Get ...

Baked Eggs in Ham Cups

Published Thursday, December 1, 2011 By Traci. Under ALL, LottaFOOD  Tags: Breakfast, cream, cupcake, cups, egg, ham
I'm always looking for new ways to serve breakfast that include protein but also tastes good.  Grease the cupcake pan. Place a piece of ham into the cupcake pan - it will become like a paper cupcake holder for the egg.  Crack and egg into each of the ham holders.  Cover with a tablespoon of heavy whipping cream.  Season with salt, pepper and other seasoning.  Bake in a 350F oven for 18-20 minutes. Top a ...

On-The-Go Quiche

Published Sunday, September 25, 2011 By Traci. Under ALL, LottaFOOD  Tags: Breakfast
These are perfect for traveling, especially when you have a 20 minute drive to school and you're running late.  They are also great for the 45 minute drive my husband takes to work each day. The mixture can be prepared the night before and assembled in 2 minutes the next morning. By the time everyone is showered, dressed and ready to leave, the quiches are ready. Grab a napkin/serviette, ...
